Blondies are hands down my favorite cookie bar, and I can’t think of a better combination of flavors than sweet with salty. So the logical next step was to take my favorite blondie recipe and add in the salty flavor.
The recipe functions as a blank canvas in the kitchen. This time I added chocolate chunks, coconut, pretzels, and nutella for a crunchy, sweet, and salty bite. The additions are optional and the recipe is adaptable. Try adding nuts and dried fruit or bananas with caramel and fleur de sel.
Blondies with chocolate chunks+nutella+pretzles+coconut (adapted from smitten kitchen)
8 tablespoons (1 stick) butter, melted. 1 cup light brown sugar, firmly packed. 1 large egg. 1 teaspoon vanilla. ¼ tsp salt. 1 cup all-purpose flour. 1 cup nutella. 3/4 cup coconut, shredded. 7 oz semi-sweet chocolate chunks. 2 cups salted pretzels, broken (not crushed).
1. Preheat oven to 350°F 2. Combine the butter and sugar and mix until creamy 3. Whisk or beat in egg 4. Mix in the vanilla and salt 5. Fold in the flour 6. Fold in the nutella 7. Fold in the coconut, chocolate chunks, and pretzels. Be careful not to further crush the pretzels 8. Pour batter into a greased 8×8 metal or foil pan and bake 25-30 minutes. Allow the blondies to cool before cutting into bars.
